If you know me in real life or you’ve been reading this blog for any length of time, you’re probably well aware that I’m pretty much obsessed with Mexican food. Chips and salsa is definitely on my top five favorite snacks list and taco night was my favorite day of the week in college. (It still would be if there was such a thing in the real world.)
So when my aunt posted a picture of her making an absolutely ginormous batch of homemade salsa with veggies grown in my cousin’s garden, I obviously requested that she share the wealth. And being the generous woman that she is, she of course sent some with my mom when she came to take care of me during my wisdom teeth ordeal. They both made it pretty clear that I wouldn’t be eating chips and salsa anytime soon (my aunt works in the dental field), but let me tell you: it took some serious willpower to stay away while my mouth was healing.
That said, as soon as I felt good enough to eat them, chips and salsa were had.
And apparently I couldn’t get enough because I’ve been covering pretty much everything in salsa ever since.
The other night, when the craving for Mexican hit again, I cooked up some chicken and peppers with chili powder, cumin, and cilantro.
I put some of the chicken + peppers mixture on a bed of lettuce and topped it with jalapenos, grated cheddar jalapeno cheese, some of my aunt’s salsa, and a little bit of habanero salsa. (I like things really spicy and my aunt’s wasn’t that hot for me.) I planned on eating it as Mexican lettuce wraps, but that plan quickly fell apart (literally) so I ended up basically eating it like a salad – and it was amazing.
So amazing that I had it again for dinner the next night… And again for lunch the next day.
I don’t know if I’ll ever eat salsa again. (Okay, that’s a lie.)
In other news…
I honestly don’t know if I’ve ever been as sore as I was this week.
After taking a week off and then jumping back in with two feet and doing some seriously tough workouts, walking has become a real challenge. I mean it; the struggle is real, people. All week, I had to waddle around work with a limp trying not to let on that I can barely stand up without wincing. Oh, and stairs? Forget it.
With that said, I was pretty happy to hear that we were doing a relatively easy workout on Thursday because everyone else was pretty sore too. (It wasn’t actually easy, but at least it was short.)
I went to play flag football on Wednesday, and it was fun to run around, plus I think it helped to stretch out my sore legs a bit.
Maybe one day they will discover that salsa is the cure for soreness. That would be my dream life.
