Totally Zapped of Energy

I honestly don’t know what is it, because I’m not coughing and I’m really not even all that congested, but it’s definitely something. It was a huge struggle to get out of bed both days, and I definitely just do not feel like myself.
Once I finally dragged my butt up yesterday morning, I headed into the kitchen for breakfast. I picked up this fresh-baked onion bagel at the grocery store on Saturday afternoon, and it was just what I needed Sunday morning. I toasted it, topped it with a little whipped cream cheese, and sided it with some fresh pineapple, and it was deeeee-licious.
In between bouts of laying on the couch feeling like a zombie, I did get some meal prep in for the week ahead. I made a couple servings of fajita chicken for lunches, which included my first new veggie-of-the-week: snow peas. I decided that I’m going to attempt to try one new veggie per week, and even though I’ve probably had snow peas in restaurant dishes before, I know I’ve never cooked them on my own, so they were first on my list.
I sautéed chicken, red and green peppers, and the snow peas in a pan with some olive oil, chili powder, cilantro, and cumin, and made two lunches for the week. I’m already looking forward to eating one of them today!
I also tried a new recipe that I saw on Instagram: coconut pumpkin balls. The original recipe only called for pumpkin puree and coconut flour, but I added a bit of honey and vanilla to mine too. I combined all the ingredients in a bowl, formed them into small little balls, and threw them in the fridge to firm up. Coconut flour apparently absorbs a ton of water, helping these little guys stick together, but still, they weren’t like traditional cookies or anything. I don’t know that I’m completely sold on the taste (I’m still getting used to coconut flour), but I do think they’ll make for a different kind of snack this week, which I can always use. If I don’t end up liking them enough, maybe I can come up with some other combination for the next time.
In the afternoon, I was starting to go a bit stir crazy from being inside for over 24 hours, so I headed outside for a little walk. It was chilly, but it definitely felt good to get my legs moving and take in some fresh air!
For dinner, I had steak (seasoned with Montreal steak seasoning, of course), with sautéed peppers over spinach. I absolutely love peppers (and steak) and I think I might be able to eat this meal every day of my life. (If it had included green beans, I’d be 100% sure of that.)
On another note, do you know why I try to never buy candy or junk food?
Because I have absolutely no self control.
None.
Zero.
I stopped at the grocery store after work on Friday to pick up a few things, and going in hungry was my first mistake. My second mistake was walking by all the Easter displays on my way to the cash register. Marketing at it’s finest, folks… they totally got me.
I picked up this tub of jelly beans, vowing that I’d have enough self control to make them last at least until Easter. We all deserve a little holiday treat, right?
Yeah, well, that definitely didn’t happen.
They’re gone.
Woops.
You’d think the sugar high I must’ve been on would’ve helped me feel a little more energetic this weekend, but nope – all it did was give me a killer stomach ache on top of already feeling crappy.
So with that said, my goals for this week are to (1) get more sleep and (2) stay away from the junk food.
I can do it.
