My New Buddy
Posted: March 4, 2013 Filed under: daily, paleo, traveling | Tags: daily, paleo, traveling 2 Comments »The hotel that we stayed in last week had a river running through it, and on a couple of the nights that we were there, performers dressed up in traditional Mayan costumes came rowing up the river in a wooden canoe. They would stop in the middle of the lobby, get up onto dry ground, and sing, dance, and play instruments for the crowd. It was really cool to watch, and on one of the nights, my mom, sister, and I got to take a picture with some of the dancers. Aren’t their costumes amazing?!
Also, my mom wasn’t the only one that got to hold this cute little guy! I think it’s pretty safe to say that he’s my new best friend. How adorable is he?!
But now that vacation’s officially over, I guess it’s time to get back to reality…______________________________________________________________________________________
Because it’s staying lighter out later, getting (a little bit) warmer, and sort of just because I miss it, I decided that I’m going to start running again. I don’t always have time to run in the mornings, so a couple times per week, I plan on running at night. I haven’t run much in the past couple months, so who knows if it will last, but we’ll see how it goes!
To ease myself back into it, tonight I started off with a quick 5 minute walk and one mile run on the treadmill after work. It’s still gets dark a tad bit early to get outside at night, but with daylight savings coming up, I’m sure I’ll be able to get out there soon enough!
For dinner, I made a quick and easy meal, much like this one. In a casserole dish, I baked up a porkchop and a sliced apple, sprinkled with some basil, and roasted green beans in a bit of olive oil and pepper alongside them in the oven. Simple and delicious!
Clearly, I’m trying to get the whole dessert at every meal thing in check after last week, but I wanted a snack last night, so I went with a few strawberries and a bit of vanilla chocolate chunk Chobani yogurt. It was just sweet enough to count as a treat, but not so outrageous that it derailed my whole day, and that’s the kind of “dessert” that works for me!

That yogurt flavor sounds amazing! I’ll be on the lookout for it now. I love apple slices sprinkled with cinnamon or dipped in vanilla yogurt for a healthy and sweet treat!
It is amazing!! Definitely my favorite. I need to try dipping apples into it!
