It’s Almost Here!

This week is flying by for me already… only three more days until Mexico!!  Of course, I have about a million things to do between then and now and very little time to get it all done, but I can’t believe our vacation is almost here!  I may not have mentioned it until recently, but we planned it way back in the fall, and I know my mom and sister are super excited for it as well.

Yesterday, I snacked on an apple with cinnamon in the afternoon.  While I was away last week, I couldn’t find fuji apples at the grocery store by my hotel, so it’s certainly nice to have them back in my life.  I hate when apples are mushy, and fujis are always perfectly crisp and sweet.  I honestly don’t know what I ever did before I knew about them, but I think I’m spoiled now!

Mid-afternoon yesterday, I realized I was out of snacks and still hungry.  I grudgingly went to the vending machine in the cafeteria in search of some nuts, but I came across this bar instead and figured I’d give it a try.  There was quite a bit of sugar in it, but otherwise, the ingredients looked pretty good, and the taste was great.  It was chewy, slightly nutty, and just sweet enough.  It’s funny because I used to hate both coconut and cashews, but I guess it’s true that your taste buds really do change because I really enjoyed this bar.

For dinner last night, I went with the old standby: flank steak with green beans and asparagus.  As you all probably know by now, I love green beans, but roasted asparagus is steadily creeping up to the top of my favorites list as well.  The only negative of dinner was that I used up the rest of my Montreal Steak Seasoning… the horror!   I guess that’ll be on the grocery list for when I get back from vacation.

Last night, I also took a few minutes to bake up some chicken meatballs using this recipe, substituting ground chicken for turkey, and omitting the spinach – because I totally forgot about it.  I don’t think I’ve ever made meatballs using chicken before, but they looked like they came out pretty tasty.  I have a spaghetti squash and some tomatoes I need to use up, so you can probably expect to see that meal in the very near future.

I think it’s been pretty well established that I’m a huge fan of winter… but those 85* temperatures are looking pretty dang tempting right about now!  Sun, sand, crystal clear ocean… I’m coming for ya!!
