Pancakes and PizzaPosted: June 2, 2012
I was really feeling like pancakes this morning, so I just went with it. I usually make wheat or protein powder pancakes, so it’s been a while since we’ve had real buttermilk ones from the box. And as much as I’d like to say there isn’t a difference, I guess there kind of is. (Although I’d still go for the healthier version if I could! I really wanted to try the new box of wheat + oat flour Kodiak Cakes mix I bought a couple weeks ago, but the box is still at our CT apartment.)
My mom only had the buttermilk variety in her cabinet though, and these things were light and fluffy like a “real” pancake should be.
Billy doesn’t like blueberries, so I kept his plain but added the fruit to mine.
I topped both of them with strawberries, plus syrup on the side.
And we both gobbled them right down!
The rest of the day was spent next door at my Memere’s house with my mom, aunts, and cousins. The ladies cleaned out and organized a lot of Memere’s stuff since she’s at the nursing home full time now, and I helped where I could. After a few hours, everyone started to get hungry, so a couple of my cousins and I headed out to pick up lunch. There’s a new Italian pizza place + bakery up the road, so we were tasked with picking up the food and picking out the desserts while we were there.
I shared a roasted pepper pizza with my mom and had a salad on the side.
And then came the big show:
My cousins and I picked out a cream puff, a slice of cookie dough cheesecake, and assorted cookies for everyone to share.
And they were gone in about three seconds, so I think it’s safe to say that no one was disappointed.
And now that I’m thoroughly stuffed, I think I may end up spending the rest of the evening on the couch watching a movie. It’s still pouring outside, as it has been all day, so it just seems like the right thing to do. And after a day full of indulgent eats, I think it’s about the only thing I can do.
